I was surprised to find today that they were nearly over ripe, and on Thursday they were mostly hard as rocks... So, with you as my inspiration, I whipped up about 2 cups of freezer jam :) I prefer the instant pectin. I'm sure it's more expensive but it uses HALF the sugar, which I'm sure you would like (maybe not your family though). So, the next time you are going to make some freezer jam and need to buy more pectin, give it a try.
