Banana Breakfast Cookies

I'd say it's time for another breakfast cookie, wouldn't you? I mean, my life would pretty much be meaningless without them, right?

These babies are low-sugar, low-fat, and they contain a fruit. Add a few walnuts, and you'll be set.

Banana Breakfast Cookies
adapted very liberally from the zucchini cookie recipe in Animal, Vegetable, Miracle
makes 18 cookies
Prep time: 5 minutes
Cook time: 10-15 minutes
Cost: $1.05
(butter: .30, sugar/honey: .10, banana: .30, oat flour: .04, whole wheat flour: .30, other stuff: .01)

1/4 C butter, melted
5 Tbsp brown sugar
1 Tbsp honey
1 C mashed banana (2-3 bananas)
1 Tbsp vanilla extract
1/4 C oat flour (If you haven't got, use 1/4 C whole wheat flour)
1 3/4 C whole wheat
1/2 tsp baking soda
1/4 tsp salt
1/4 tsp cinnamon
1/4 tsp nutmeg
1/4 C chocolate chips, optional
1/4 C walnuts, optional

Combine butter, sugar, honey, vanilla, and mashed bananas.

Combine flours, baking soda, salt, cinnamon, and nutmeg in a separate bowl.

Add dry to wet. Stir in chocolate chips and/or walnuts if using.

Drop onto lightly greased baking sheet. Flatten them a bit if they're stiff mounds. Bake at 350 for 10-15 minutes.
